10/14/15 Katie's Healthy Eating Journal: Friday

Sometimes I get sick of slicing up all my veggies and creating a huge salad for dinner.  But, I always feel like salad I get the most full on and I really love it.  I like cooked veggies but I feel like it takes more time and the margarine doesn't seem to "go as far" in order to feel full.  If I'm going to eat cooked veggies I'm not going to lie, I like butter on them.  In the past I would cook them and use a ton of spray butter.  But, with my body absorbing any amount of sodium since the baby was born has made me tentative to try it again even though things have finally seemed to level out.  I cannot shake this last pound and a half and I'm determined to reach it.  So, until then I will not be experimenting with this.  But, something I've recently started doing on days when I'm lazy or tired instead of preparing an elaborate salad is buying the Light Caesar salad kits.  I have been eating them once or twice a week lately.  They are really good and filling and all you have to do is mix up the kit and voila!  Fast and easy.  What is shocking to most people is that I eat an entire bag myself.  That's the philosophy of the JC program.  Fill up the most on veggies.  The JC meal is not enough for me.  In order to feel full I have to eat very large salads every night.  As long as you're following the serving size for light dressing or margarine you can have as many veggies as you want.  I just try to stretch out my 2 tbsp. of dressing on my salad as much as I can in order to eat a gigantic salad.
